6 cups rolled oats
1 cup chopped pecans
1 cup chopped almonds
1 ½ cups shredded or flaked coconut (unsweetened)
½ cup maple syrup
½ cup coconut oil
1 cup raisins or dried fruit (optional)
Mix dry ingredients in roasting pan.
Gently melt coconut oil in small saucepan. Add maple syrup and salt.
Pour over dry ingredients and mix well.
Bake at 300 degrees for 1 to 1 ½ hours, stirring every 15 minutes until mixture is crispy and toasted.
You can add 1 cup of quinoa flakes or flakes of other types of grain, sunflower seeds, etc.
