                           Seedy Saturday Cookies

 

Ingredients:

1 cup coconut oil

2/3 cup raw cane sugar

2/3 cup coconut sugar

2 eggs

2 tbsp. whole milk

2 tsp. vanilla extract

2 cups all-purpose flour

1 ½ cups quick-cooking oats

½ cup quinoa flakes

1 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

1 cup of sunflower seeds, pumpkin seeds or a combination of both

¼ cup sesame seeds

¼ cup chia seeds, flax seeds or a combo of both

1 cup of raisins or other chopped, dried fruit

 

Directions:

Preheat oven to 350 degrees.

Line baking pans with parchment or brush with coconut oil.

Drop by teaspoon on cookie sheet, flatten slightly.

Bake for 10-12 minutes.

If you like chewy cookies, bake for the lesser time.

 

NOTE:

You can use butter instead of coconut oil and substitute regular sugars for the organic ones.
