Seedy Saturday Cookies

Ingredients

  • 1 cup coconut oil
  • 2/3 cup raw cane sugar
  • 2/3 cup coconut sugar
  • 2 eggs
  • 2 tbsp. whole milk
  • 2 tsp. vanilla extract
  • 2 cups all-purpose flour
  • 1 ½ cups quick-cooking oats
  • ½ cup quinoa flakes
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup of sunflower seeds, pumpkin seeds or a combination of both
  • ¼ cup sesame seeds
  • ¼ cup chia seeds, flax seeds or a combo of both
  • 1 cup of raisins or other chopped, dried fruit

NOTE:

You can use butter instead of coconut oil and substitute regular sugars for the organic ones

Directions

  1. Preheat oven to 350 degrees.
  2. Line baking pans with parchment or brush with coconut oil.
  3. Drop by teaspoon on cookie sheet, flatten slightly.
  4. Bake for 10-12 minutes.
  5. If you like chewy cookies, bake for the lesser time.
