Rhubarb Pie

Description

Makes a deep dish 9” pie

Ingredients

Filling:

  • 4 cups diced rhubarb, about ½ inch dice
  • 1 ½ cups raw or white sugar
  • ¼ cup cornstarch

Easy Pie Pastry:

  • 2 cups all-purpose flour
  • 1 cup cold lard or ½ cup lard and ½ cup butter, cut in small cubes
  • 1 ½ tsp. Kosher salt
  • 2 tbsp. sugar (for dessert pies)
  • ½ cup ice water
