Irish Soda Bread

  • 3 1/2 cups all purpose flour
  • 2 tablespoons caraway seeds (optional)
  • 1 teaspoon baking-soda
  • 3/4 teaspoon salt
  • 1 1/2 cups (about) buttermilk
  • 1 tbsp. sugar (optional)

Sugar is not traditional in soda bread, it’s just a personal preference!!

Heat oven to 425 degrees. If using a pizza stone, make sure it is in the center of the oven.  If using a baking sheet, line with parchment and sprinkle with flour.

Whisk dry ingredients together and make a well in the center.

Pour in 1 ¼ cups of buttermilk and stir together. If dough doesn’t come together, add buttermilk 1 tbsp. at a time.

Turn dough out on floured counter and gently pull the dough together. DO NOT ‘knead’ and handle the dough unnecessarily. This will make it tough!

Shape the dough into a circle about 2 inches thick. With a sharp knife, cut a deep cross in the center.

Place in the oven for about 30 minutes or until brown and bottom sounds hollow when tapped.

Remove from oven to a rack. Wrap with a clean tea towel and allow to  cool for at least 30 minutes.
